This variety has long been a favorite of English brewers for its rich flavor and very forgiving brewing performance. Since this malt is fully modified, a protein rest is not necessary. This is a very popular base malt used in pale ales, bitters, porters, IPAs, stouts, barleywines and Scottish ales. Excellent yields and efficient run off make it the malt of choice for producing English style beers.

Developed in the 1960’s Maris Otter is synonymous with brewing in the UK. Maris Otter malt is known for it’s rich, deep flavour which is often described as ‘biscuit-like’ which is easily discernible from more neutral malts such as 2-Row or Pilsner. Maris Otter is excellent for a wide variety of beers, but in particular it shines in malty UK beers such as bitters, porters, stouts, ESBs, cask ales and milds. More recently Maris Otter has become a favorite in IPA’s needing a malt backbone to massive hop flavours and in SMaSH recipes due to its complexity.
